Sous Chef

We are recruiting a passionate, experienced chef to join an established team at the Bedruthan Hotel pushing our food offer to the next level. We offer an engaging, structured kitchen environment that drives creativity and development. We work straight shifts covering breakfast, lunch, afternoon tea and dinner, as well as a small function trade.
Our menus and creations are inspired by the seasons and our specialist Cornish growers, farmers and fisherman. This role will help provide the professional delivery of these menus.
You must be well presented, articulate and driven, and have a natural tendency to do everything to the best of your ability.
Key responsibilities include:
- Assisting the head chef with the day-to-day running of the kitchen
- Designing menus together with the head chef
- Preparing, cooking and presenting food in accordance with agreed restaurant standards
- Supervising the work of the kitchen brigade
- Ensuring dishes are prepared and presented in accordance with recipes
- Deputising for the head chef, when absent
- Ordering food provisions, performing stock control and overseeing inventory management
- Ensuring that all kitchen operations are in compliance with food hygiene (HACCP) and safety regulations
- Organizing kitchen team work shifts
- Coordinating team training and development
- Managing and resolving any issues that may arise quickly and efficiently
- Has a minimum of 2 years’ experience in a quality hotel (4-star or higher) or restaurant
- Experienced in all areas of food preparation including butchery, fish prep, sauce, and patisserie
- Has the ability to organise, plan and prioritise
- Demonstrates the ability to consistently deliver a quality product
- Works in a clean and tidy, and well organised manner
